Merriman’s Kapalua occupies an oceanfront position on Maui, with the main restaurant and the more casual Oceanfront Point offering different ways to enjoy the coast. The kitchen works closely with Hawaiian farmers and fishermen, allowing named local suppliers and the day’s catch to shape dinner. The menu includes tableside ahi poke with Maui onions and ‘inamona, wok-charred ahi and macadamia-crusted fresh catch with mushroom-sake reduction. Vegetables receive equal specificity, from Upcountry produce to Honokōhau taro falafel. Cocktails include a Mai Tai with macadamia orgeat and passion-fruit honey foam. The Oceanfront Point serves a smaller menu outdoors when weather permits.
