Mihan Honke
Taiwan

Mihan Honke brings Japanese hot-pot cooking to the third basement level of Regent Taipei. The entrance passes a wall of antique sake barrels before corridors of latticed wood lead to private booths, giving the restaurant a distinct interior journey within the hotel. The menu centres on traditional nabe dishes, including shabu-shabu and sukiyaki. These two preparations offer different ways to enjoy the ingredients, from quickly cooking them in broth to the richer, sweeter flavours of sukiyaki. The booths provide a more enclosed setting for the meal, while the focus on hot pots keeps the cooking closely connected to the table.
