Mil
Moray, near Cusco, Peru

Near the archaeological terraces of Moray, MIL Centro explores the ingredients and food traditions of the surrounding Andes. Virgilio Martínez’s restaurant takes a deliberately local approach: rather than travelling through Peru’s different ecosystems on the plate, the meal concentrates on the landscape outside its doors. Tubers, maize, herbs and other regional produce provide the foundations for a tasting-menu experience tied closely to place. This is a Sacred Valley destination, not a restaurant in central Cusco. The official site identifies its setting at 3,568 metres above sea level and offers lunch and a separate immersion experience. Travellers should plan the journey and high-altitude setting as carefully as the meal.
