Minamo has just eight seats at Mandarin Oriental Palace, making dinner feel focused and personal. Chef Yutaka Kobayashi prepares an omakase sequence in front of guests, with sushi craftsmanship at its centre and sake available to accompany the meal. Everyone follows the same rhythm, so this is an evening to arrive punctually and surrender the menu choices. The restrained counter setting gives a welcome alternative to Lucerne’s larger, more formal dining rooms.
