Mombo Dining
Botswana

Dining at Wilderness Mombo explores African ingredients through contemporary cooking and carefully considered wine pairings. In the Okavango Delta, the kitchen's seasonal tasting experience can run to seven, eight or nine courses, with dishes developed first and wines selected to complement them. One example is a morogo salad, using the leafy vegetable with madila sour-milk dressing, grapes and sherry gastrique. It connects a familiar local ingredient with a more elaborate restaurant presentation. Menus continue to evolve with the seasons, balancing meat and plant-based choices. Candlelit meals beneath the stars add the camp's landscape and sounds to the food-and-wine experience.
