Nineteen18 takes its name from the year Lithuania declared independence, and its cooking focuses on what the country produces today. On Dominikonų Street in Vilnius, chefs Vita Bartininkaitė and Justinas Misius create a ten-course tasting menu that changes with the seasons, using predominantly Lithuanian ingredients. Their shared approach draws on local producers, fermentation and preserving traditions while allowing influences from elsewhere. Dinner unfolds over roughly two and a half to three hours. Wine pairings and a non-alcoholic pairing provide different ways to follow the menu, whose dishes evolve rather than remaining a fixed set of signatures.
