NOA Chef's Hall
Estonia

NOA Chef’s Hall overlooks Tallinn Bay from the same modern building as its sibling restaurant, NOA. The evening begins with an aperitif in a lounge facing the water, before moving into a dining room organised around the visible kitchen. Open-fire cooking is central to the chefs’ work. A seven-course tasting menu combines ingredients such as Canadian lobster with preserved, locally foraged produce. Courses explore contrasting textures and complementary flavours, with one part of the meal taking guests to the chef’s counter. The sequence connects the dining room directly with the kitchen, adding a change of perspective during dinner.
