Noble turns the food heritage of Rhodes into the basis for a contemporary gastronomic experience. On the top floor of Elysium Resort & Spa, the restaurant combines a broad coastal outlook with a kitchen interested in the island’s less familiar recipes, ingredients and memories. The setting is refined, but the strongest story comes from the work behind the menu. Executive chef Giorgos Troumouchis and Noble chef Spiros Kougios draw on research into Rhodian food culture and relationships with local producers.
