Noni
Malta

Noni is chef Jonathan Brincat's restaurant in a centuries-old house in Valletta, named after his nickname. The cooking reinterprets Maltese and Mediterranean dishes through techniques drawn from his training in classic French cuisine. Seasonal ingredients are sourced largely from local suppliers, whose locations are shown on a map accompanying the menu. Guests choose between a full tasting menu and a shorter version, both organised as a progression through the island's flavours. Traditional dishes are reconsidered through contemporary preparation and presentation, making the chef's connection with Malta central to the meal rather than relying on a fixed selection of international fine-dining dishes.
