Pakuri

Pakuri explores modern Paraguayan cooking in Asunción's Villa Morra neighbourhood. Founded in 2016 by chef Sofía Pfannl and sommelier José Miguel Burga, the restaurant places local ingredients and seasonal changes at the centre of its menu. Its architecture is as distinctive as the concept. Shipping containers form the structure on a site surrounded by vegetation, creating open spaces and terraces that connect the dining area to the garden. The food reconsiders Paraguayan traditions through carefully selected indigenous products, allowing the availability of ingredients to shape what is served. The combination of contemporary cooking and an unusual garden-integrated building gives Pakuri a clear identity for diners interested in the country's produce and culinary development.
