Pelegrini occupies Villa Pelegrini-Tambača, a Renaissance palazzo beside the Cathedral of St James in Šibenik's old town. Chef Rudolf Štefan builds the cooking around the land and sea of the surrounding region, giving traditional Dalmatian flavours a contemporary form. Four- and six-course tasting menus guide diners through that approach. Local sourcing reaches beyond buying ingredients: Štefan makes his own olive oil and collaborates with winemakers on wines produced exclusively for the restaurant. Those relationships connect the meal to the area's farms, coastline and vineyards, with the historic building providing a distinctively Šibenik setting.
