The Penthouse Restaurant belongs to the locally owned Penthouse Hotel in downtown Koror. Former First Lady Dilbuked Christina Salii opened the hotel and restaurant in 1991, initially taking on cooking, service and reception herself. The restaurant serves breakfast, lunch and dinner, with a menu spanning international dishes and local Palauan delicacies. That combination connects an everyday town dining room to the food traditions of the islands. The family remains involved in the business, with children, grandchildren and other relatives working alongside longstanding employees. Its history and local ownership are central to the restaurant's identity, giving visitors a different context from the dining rooms of Palau's larger beach resorts.
