Peumayen Ancestral Food

In Santiago's Bellavista neighbourhood, Peumayén Ancestral Food explores Chile's Indigenous culinary heritage through contemporary cooking. The project draws on pre-Hispanic products, preparations and techniques, working with growers, seed keepers and other producers from different parts of the country. Its menu gives that research concrete form. Rapa Nui ceviche combines tuna with coconut, fried plantain and sweet potato, while a Tierra del Fuego guanaco crudo arrives with pickles and q'ala tant'as bread. Sweet potato and quinoa soup incorporates squash coated in carob flour and smoked rose oil. These dishes trace a broad geography through ingredients, making the meal an exploration of Chilean food traditions.
