Evolution Restaurant at Pikaia Lodge looks over the Galápagos National Park from Santa Cruz's uplands. Its contemporary dining room takes artistic inspiration from human evolution, extending the lodge's central theme into the restaurant. Chef Cristian Puente's menus combine Ecuadorian and international flavours, using local ingredients alongside the produce needed for a varied culinary offering in a remote island setting. The menu changes regularly, giving staying guests different meals during an exploration programme. An air-conditioned walk-in cellar holds South American and other international wines, with the maître d' available to guide pairings.
