Portfolio Restaurant in central Prague presents contemporary Czech cooking under head chef Aleš Pátek. The kitchen works with local farmers and seasonal ingredients, retaining links to traditional flavours while introducing other influences. Diners can choose individual dishes or follow a tasting menu with wine pairings. Recent courses include marinated char from Kalenda fish farm with buttermilk jelly and cider beurre blanc, followed by duck confit with mushroom stuffing, fermented plums and sour-cherry sauce. A cognac sponge cake with apples and poppy ice cream completes the sequence. Carefully selected mature wines accompany the food, and private dining rooms provide space for smaller gatherings.
