Pozo Colorado

Pozo Colorado Restó explores the traditions of Paraguayan barbecue in Asunción. Chef Rodolfo Angenscheidt, known as Chapori, developed the restaurant around grilled meat and the accompaniments associated with a Guaraní asado. The concept recalls the country's parrilladas of the 1980s. Corn, cassava and queso Paraguay form part of that culinary language, with dishes such as chipa guazú, sopa paraguaya and mbeju appearing in earlier accounts of the menu. Its design evokes a Chaco estancia, using details such as woven furnishings and enamel crockery to connect the room to Paraguayan craft and home cooking. The restaurant's focus gives a meal a clear regional context, with meat and traditional side dishes sharing the story.
