Proof on Main brings contemporary art and Kentucky bourbon into a restaurant at Louisville's 21c Museum Hotel. Rotating exhibitions and installations extend from the adjoining hotel into the dining and bar spaces, so the visual setting changes alongside the food. Chef Cody Stone's menu includes a bison burger with smoked Gouda and bacon jam, rainbow trout with labneh and chickpeas, and zucchini risotto with almonds and mint. The bar's single-barrel programme works directly with distillers to bottle selections exclusively for Proof and 21c. Breakfast, lunch, dinner and weekend brunch give several ways to combine a meal with the hotel's art.
