Rabot Restaurant
Saint Lucia

Rabot Restaurant explores cacao as an ingredient across an entire meal. On the Rabot Estate near Soufrière, its open-air setting looks towards Petit Piton and the surrounding rainforest, placing the crop's growing environment close to the table. The kitchen uses cacao from the estate and other Saint Lucian growers alongside local fish, seafood, vegetables and fruit. Roasted nibs bring toasted, nutty notes to savoury dishes, while fresh pulp contributes a sharper, fruitier character to sorbets, ice creams and cocktails. Dark chocolate appears in dressings and desserts as well as more familiar sweet preparations. The Cacao Bar extends that experimentation into drinks, using different parts of the harvest with other fragrant ingredients. Guests can also come for a dessert in the lounge or book the restaurant's cacao-themed afternoon tea. Breakfast, lunch and dinner are open to hotel residents and outside visitors. That makes Rabot a dining destination in its own right, particularly for those keen to discover how many flavours a single crop can offer.
