Radius takes its name seriously: the visible ingredients used by Stefan Beer’s team come from within 50 kilometres. That restriction produces an unusually local tasting menu in the polished setting of Victoria-Jungfrau, with regional wines adding another layer to the meal. A vegan menu is offered alongside the main experience. This is an evening to reserve for the cooking itself, with time for several courses and the staff’s explanations of what has come from the surrounding landscape.
