Restaurant Pearl Morissette sits above the winery on a 42-acre property in Ontario's Niagara region. Floor-to-ceiling windows overlook a regenerative farm, vegetable and flower gardens, herbs and a peach orchard, making the agricultural surroundings visible throughout the meal. The changing prix fixe menu draws on seasonal French cooking and ingredients from regional farmers, ranchers, foragers and fishing communities. Chefs Daniel Hadida and Eric Robertson work with produce from Ontario, the Great Lakes and Canada's coasts. Wine is an equally substantial part of the experience, with Pearl Morissette cuvées and older vintages joined by international producers sharing the winery's approach. Both the dining room and Chef's Table offer the tasting-menu format.
