Rolando's Restaurante brings Central and South American cooking to Arkansas, with restaurants in Fort Smith, Hot Springs and Fayetteville. Ecuadorian chef Rolando Cuzco founded the business with Sherri Cuzco, building a menu that reaches beyond one national tradition. Handmade Josefina tamales come with chicken, pork or chilli and cheese, while Ecuadorian chicken soup provides a direct connection to the chef's background. Pollo Bohemios combines Cuban-style mojo chicken with a lime and tequila sauce; other choices include tilapia with tequila and capers and goat's-cheese quesadillas with mango. Black beans and rice accompany several dishes, and Ecuadorian-style bananas bring the same regional character to dessert.
