Rumari
Indonesia

Rumari sits at the highest point of Raffles Bali, looking out towards the sea from the resort's hillside. Chef Gaetan Biesuz takes a contemporary approach to Indonesian cooking, drawing on the archipelago's varied ingredients. His 80/20 sourcing philosophy brings 80 per cent of produce from Indonesia, with the remainder imported where necessary. For a closer view of the kitchen's work, the Rumari Counter seats up to ten guests. Its surprise sequence changes with the season, with dishes prepared and plated in front of diners and opportunities to speak with the chefs and sommelier. A wine collection of more than 250 labels includes established producers and independent winemakers from around the world.
