Sazon
New Mexico

Sazón in Santa Fe explores Mexican cooking through chef Fernando Olea's interest in complex sauces and distinctive flavour combinations. Mole is central to that identity, including a New Mexican version created for the city's 400th anniversary. The menu ranges from huitlacoche on small tortillas to shrimp enchiladas with zucchini-blossom and poblano sauce. Cholula combines poblano chilli, ground meats, nuts and dried fruit with walnut sauce and pomegranate, illustrating the kitchen's layered approach. A nine-course degustation menu offers a longer exploration, with wine, tequila and mezcal pairings available. Mole also reaches dessert, where mole poblano ice cream is served with chocolate and crisp beetroot and sweet potato.
