Scales occupies Maine Wharf on Portland's working waterfront, where large windows look towards the harbour. The restaurant takes traditional New England cooking as its starting point, with Maine seafood and locally sourced meat dishes forming the core of the menu. A raw bar offers oysters and seafood preparations, while the kitchen serves dishes such as pan-roasted halibut with brown butter and a stew of clams, mussels, fish and squid. Roasted fennel and pancetta give the stew another layer beyond the shellfish. The waterfront dining room and active bar make it possible to begin with oysters and a drink before moving into a more substantial seafood meal.
