Schloss Schauenstein
Switzerland

Schloss Schauenstein combines a destination restaurant with rooms in a historic castle at Fürstenau in Graubünden. Andreas Caminada opened the restaurant in 2003, establishing an address whose cooking is grounded in French haute cuisine but shaped by an Alpine identity. The kitchen draws on ingredients grown around the restaurant, with vegetables and herbs playing a substantial role. Contemporary technique gives those familiar ingredients different expressions without removing their connection to the surrounding region. Overnight accommodation extends the experience beyond dinner. Rooms and suites retain castle details such as panelling and high ceilings, with views towards the garden and Graubünden mountains. A stay here allows the meal, architecture and landscape to become one visit, rather than a restaurant booking followed by a journey elsewhere.
