Silvestre occupies an 1890s house in San José's Barrio Amón, bringing contemporary Costa Rican cooking into a historic residential setting. Its Óptica tasting menu unfolds over eight courses, using local ingredients and modern techniques to explore memories of home kitchens, cantinas and the country's food traditions. An à la carte menu provides another route through the kitchen's approach. Pairing options include non-alcoholic drinks as well as wine-led selections, with the tasting menu designed as a progression of flavours and textures. The old house, its separate dining spaces and garden give the restaurant a strong sense of place within the capital.
