The Lecture Room & Library is sketch’s gastronomic restaurant at 9 Conduit Street in Mayfair. Upstairs in an eighteenth-century house, its richly coloured, lavish dining room brings a pronounced sense of theatre to the meal. Mourad Mazouz and Pierre Gagnaire’s restaurant takes a modern French direction, with courses often expressed through several related dishes. That approach gives each principal ingredient more than one treatment and asks diners to follow a sequence of flavours rather than a single plate. Examples highlighted by Michelin include Cornish wild turbot served with clams, mango and a preparation of its skirt. Welsh lamb appears with sweetbreads and kidney, while its fillet is presented in broth. These combinations show the kitchen’s interest in building a complete exploration around an ingredient.
