Songtsam Dining Laigu
Tibet

Dining at Songtsam Lodge Laigu connects a remote glacier setting with ingredients from across the Yunnan–Tibet route. At 4,200 metres, the lodge serves three meals a day, using produce such as alpine yak, village-raised Tibetan pork, vegetables from Bomi and walnuts from Tacheng. Chinese dishes are presented as individually served courses, an approach the lodge uses to balance the meal and limit waste. Preparations described by the kitchen include yak ribs with Tibetan spices and a tomato-and-bone-stock sauce, followed by walnut pie made with Tacheng kernels and brown sugar. The landscape of glaciers, snow mountains and lakes gives these meals their setting.
