Spectrum sits on the 28th floor of Grand Hotel Millennium Sofia, with views across the Bulgarian capital. Contemporary interiors, art installations and a separate cocktail lounge give the restaurant a lively evening character, while a private salon accommodates more secluded gatherings. The kitchen combines Asian and Latin American influences. Recent dishes have included kimchi guacamole with yuzu and homemade nachos, duck and Parmesan gyoza with jalapeño, and fish tacos with mango salsa and aji panca. Miso, tamarind, agave and chilli appear across the menu, connecting the two culinary directions. Wine and signature cocktails accompany the food, with guest DJs adding to the atmosphere.
