Speilsalen is Britannia Hotel's fine-dining restaurant in Trondheim, set within its historic Mirror Hall, which dates to 1896. Head chef Håkon Solbakk and his team build tasting menus around seasonal ingredients from Trøndelag, giving the region's produce a central role in the meal. The signature Grand Symphony moves through a sequence of courses, while Petite Symphony offers a shorter selection drawn from the same culinary repertoire.
