Taiko

Taiko occupies the former percussion department of Amsterdam's Sweelinck Conservatory, now Mandarin Oriental Conservatorium. The room's previous life gives the restaurant a direct connection to the building's musical history. Japanese technique, ingredients and presentation guide the kitchen, with influences from other Asian cuisines adding breadth. Seasonality and careful preparation shape both the omakase experience and the à la carte menu, allowing diners to follow a sequence of courses or choose their own meal. The Museum Quarter address makes Taiko a natural continuation of a day spent around Amsterdam's galleries. Its combination of a distinctive historic space and a focused Asian culinary direction gives dinner an identity separate from the hotel's other public rooms.
