The Chairman

The Chairman is a Cantonese restaurant on Wellington Street in Central, Hong Kong. Its cooking follows traditional methods and aims to emphasise the original flavour of each ingredient. Local fishermen, condiment makers and food producers form part of its sourcing network, with seafood selected at Aberdeen Fish Market. The kitchen produces its own flavoured oils and uses a farm in Sheung Shui for preserved meats and pickles. Preparations described by the restaurant include razor clams with aged lemon and herbs, and baby pigeon smoked with Longjing tea and chrysanthemum. Fresh ingredients, carefully made sauces and relatively simple cooking underpin the menu's distinctive approach.
