The Cookery is a restaurant and oyster bar in Seward, founded in May 2015 by chef Kevin Lane and his wife Stacey. Its cooking centres on Alaska's produce, with fresh oysters delivered daily, local farmed meats, fish and ingredients from the Kenai Peninsula. Foraged foods also contribute to the changing offer. That sourcing gives the menu a seasonal character rather than a fixed set of dishes. The restaurant publishes daily changes and specials, allowing the kitchen to respond to availability.
