The Dining Room at Park Hyatt Siem Reap brings Bill Bensley's design to the table, combining Art Deco references with Khmer ceramic tableware, bespoke furniture, curated art and polished marble floors. Breakfast and dinner are served in a setting that draws on the hotel's Cambodian surroundings. The current dinner menu has a broad international range, with charcoal-grilled Wagyu, lamb and king prawns alongside steak au poivre and mushroom tortellini. Seafood dishes include seabass with herb salsa and salmon with beurre blanc. A choice of sauces and sides accompanies the grill selections, while French onion soup, crème brûlée and profiteroles give the menu a recognisable French thread.
