the dune
Frankfurt am Main, Germany; The Florentin, Paul-Ehrlich-Straße 9, 60596 Frankfurt am Main, Germany

The dune has quickly become a consequential addition to Frankfurt’s fine-dining landscape. Within The Florentin hotel, travertine, timber and leather create a contemporary room that feels composed rather than ornate. Niclas Nußbaumer leads the kitchen, with Lea Rupp closely involved in the guest experience. The cooking favours carefully judged acidity, concentrated flavours and a clear expression of the main ingredient. Michelin has documented sea bream with peas and vin jaune, and pigeon with salsify, red cabbage and kosho, illustrating the way European foundations meet more widely travelled accents. The current official offer includes an extended tasting menu and a shorter option, while a separate small-plates format provides another way into the restaurant. A wine list approaching nine hundred selections gives the team considerable scope for pairings and individual bottles. Two Michelin stars arrived in the 2026 German selection, roughly half a year after opening. That distinction supports a high position here, but the restaurant also brings a fresh setting and confident authorship to the city. Book with enough time to let the menu develop at its intended pace.
