The George V Dining Room

The George V Dining Room at Ashford Castle was built by the Guinness family to honour the Prince of Wales's 1905 visit. Rich panelling and Waterford Crystal chandeliers give the room a strong sense of its Edwardian origins. Executive chef Liam Finnegan's menus focus on carefully selected produce, including fish from Irish waters and a signature beef dish carved at the table. Table d'hôte and tasting menus offer different lengths of meal, with dedicated vegetarian and vegan alternatives. Wines selected by the sommelier team accompany the cooking, while homemade petits fours and desserts complete dinner in the historic castle setting.
