The Herbfarm
Washington

The Herbfarm builds a nine-course dinner around the food and drink of the Pacific Northwest. Set in a cottage in Woodinville wine country, the restaurant finalises its chef-selected menu daily, following the ingredients available from fields, forests and waters. Its own farm covers nearly five acres within an agricultural trust. Crops are chosen for flavour and heritage, while the on-site garden supplies herbs, greens and flowers picked shortly before dinner. Guests can wander the garden on arrival, connecting the meal with the ingredients at their source. Seasonal themes shift from native winter truffles to spring salmon and autumn mushrooms. Dinner includes a choice of regional wine, beer or non-alcoholic botanical pairings, making the drinks an integral part of the experience.
