The Morrison Room brings contemporary Irish and European dining to the historic heart of Carton House in County Kildare. Designed by Richard Morrison in 1815, the room retains carved marble fireplaces and a coffered ceiling, providing a substantial architectural setting for dinner. Seasonal menus draw on Irish producers, foraged ingredients and produce from Carton Demesne. The tasting format allows the kitchen to develop these elements across a sequence of courses, with wine pairing available. Recent combinations have included scallop with almond, buttermilk and caviar, and sole with chicken wing, shallot and morel, illustrating the restaurant's detailed handling of familiar ingredients.
