The Nam Hai Cooking Academy turns Vietnamese food into a practical experience at Four Seasons Resort The Nam Hai. Classes follow rotating themes, moving between Hanoi's cooking, Hue's imperial recipes and Hoi An's street-food traditions. The resort's herb and vegetable garden cultivates more than 40 seasonal varieties. Those ingredients connect the class to the growing process as well as to the recipes, before guests return to the academy for a hands-on session with the chefs. Personal cooking stations allow participants to prepare regional dishes themselves. The academy is therefore a distinct culinary activity within the resort, offering a closer understanding of ingredients and methods than a restaurant meal alone.
