On Dauphin Street, its kitchen works with local farmers, including growers using organic practices, to give regional food a lighter, fresher treatment. Menus change with the ingredients available, rather than following a fixed collection of dishes throughout the year. Lunch, dinner and weekend brunch provide different ways to experience that approach.
