The Oak Room occupies Adare Manor's original family dining room, extending into the historic colonnade beside the River Maigue. Oak panelling and arched windows frame views of the formal gardens and golf course, with the setting changing from long summer evenings to candlelit winter dinners. Head chef Michael Tweedie's tasting menus follow the seasons and draw on producers across Ireland. Seafood, farmed meat, game and vegetables are joined by estate honey and foraged herbs. A handmade cheese trolley presents Irish cheeses at the table, while the sommelier team offers several wine pairings and a non-alcoholic alternative. The approach keeps the surrounding Irish landscape closely connected to the meal.
