The Phoenicia Malta's former Phoenix restaurant now operates as Contessa, named in honour of hotel co-founder Countess Margaret Strickland. The reimagined restaurant retains its connection to the hotel's gardens, with a botanical-inspired, glass-enclosed terrace conservatory for year-round dining. Its Southern Mediterranean cooking follows Malta's seasons and draws on local produce. Breakfast, lunch, dinner and weekend brunch offer different ways to experience the room, while tableside cocktails and freshly prepared tiramisu add theatre to the meal. Panoramic garden views extend towards the Valletta bastions, giving the restaurant a setting closely tied to the historic hotel's grounds.
