The Revolutionary Dining Room & Bar at Hyatt Regency Sofia takes its name from influential twentieth- and twenty-first-century figures who challenged convention. On Vasil Levski Square, the restaurant serves contemporary food shaped by seasonal produce and international influences, with lunch, dinner and Sunday brunch offering different occasions to visit. Italian references run through pasta, risotto and tiramisu, while Bulgarian tarator is reworked with sheep's yoghurt, cucumber, walnuts and yoghurt sorbet. Other dishes include venison ragù tagliatelle, nettle and porcini gnocchi, and beetroot risotto with goat's cheese mousse. Sharing platters and a charcoal grill broaden the choices alongside vegetarian and vegan preparations.
