TTK Fledgelings gives dining in Cape Town a purpose beyond the meal. Created in the former home of The Test Kitchen, the restaurant provides an entry into hospitality for people who have not had access to formal chef or guest-service training. Mentoring takes place within a working restaurant, making the service and kitchen part of a practical learning environment. Guests support that process through an ordinary restaurant visit, while the team gains experience with real diners and a developing menu. The Fully Fledged tasting menu reflects how the project has evolved since it began in 2021, drawing together dishes developed with the mentors.
