The Yeatman Gastronomic Restaurant
Portugal

The Yeatman Gastronomic Restaurant overlooks Porto from Vila Nova de Gaia, across the Douro. Large dining-room windows and a terrace keep the river and historic city in view during chef Ricardo Costa's tasting experience. The evolving Origins menu unfolds in two chapters, beginning with appetisers in the bar and kitchen. Traditional Portuguese cooking and seasonal produce underpin the courses, with fish and seafood arriving from the coast. A suckling-pig preparation illustrates the kitchen's interest in renewing familiar national flavours. Wine is an integral companion to the food. Wine director Elisabete Fernandes draws on Portuguese regions and selected international bottles, with several pairing choices including a non-alcoholic selection. The restaurant's pace and sequence give diners time to follow the relationship between ingredients, technique and the wines.
