Toqué! in Montréal is the restaurant of chef Normand Laprise and co-owner Christine Lamarche. Its cooking begins with local products and the producers who supply them, with the menu changing according to the ingredients arriving in the kitchen. The restaurant is in the Quartier International, between the downtown area and Old Montréal. Both à la carte and tasting menus give diners ways to explore this ingredient-led approach. A network of local suppliers brings produce, meat and other ingredients into a kitchen that treats their origins as part of the meal. The tasting format allows several courses to develop around the season’s arrivals, while wine forms an important part of the restaurant’s programme.
