At St. Regis Gardens on Palm Jumeirah, Trèsind Studio gives Indian cooking the concentrated format of a small tasting-menu restaurant. Chef Himanshu Saini builds successive courses around familiar spices and regional flavours, using contemporary techniques to change their presentation and texture. The dining room seats around twenty guests, with the kitchen forming part of the experience. Courses travel through different parts of India, and staff explain the ingredients and ideas behind them as the meal unfolds. Locally sourced produce joins the pantry of Indian spices, making the menu a conversation between the country’s culinary traditions and the restaurant’s Dubai setting.
