Trillium Kitchen + Cocktails is The Grove Hotel’s signature restaurant in downtown Boise. Its contemporary American cooking draws on Idaho and the Pacific Northwest, with local and regional ingredients forming much of the menu. Idaho trout, grass-fed beef, wild bison and potatoes give the kitchen a clear connection to its surroundings. An open kitchen lets diners watch the chefs at work, while mixed media details and patterned tiles shape the dining room. Service extends from breakfast through lunch and dinner, with a separate weekend brunch. Cocktails accompany the food, and the neighbouring hotel bar serves local draft beers and shareable plates. Diners can also use the hotel’s complimentary parking arrangement for up to three hours.
