Trio An American Bistro sits just off Jackson’s Town Square, with a wood-fired oven and open kitchen at the heart of the room. Will and Jennifer Bradof opened the restaurant in 2005, building its modern American menu around seasonal ingredients and nightly specials. Wood-fired bread with honey-whipped ricotta introduces the cooking style, while pizzas, wild-game pasta and seafood extend the selection. The Trio burger comes with blue-cheese waffle fries, giving the menu a more familiar option alongside its changing dishes. The full-service bar offers cocktails, wines and local craft beers. Limited pavement seating is available in warmer months, extending the small bistro onto South Glenwood Street.
