Tuljak
Estonia

Tuljak occupies a modernist Tallinn building designed by Valve Pormeister in 1964 and restored in 2015. Its horizontal concrete forms, dark glass and timber detailing remain part of the experience, with a seaside terrace extending the restaurant outdoors in summer. The menu combines Estonian ingredients with contemporary preparations. Herring appears with potato, apple and cottage cheese, while lamb dumplings are served with wine beurre blanc and smoked sour cream. Quark pancakes with sour cream ice cream and spruce syrup carry the local character into dessert. Diners can choose à la carte or follow the chef's four-course menu, with wine pairings available.
